Directions

For all the seafood lovers! A recipe for a homemade fish soup that my Swedish grandmother always makes. Prepare this soup for yourself or for your friends/family. Not only healthy but also super tasty.

Start with making the fishbouillon. Put a pan on the heat and add 1 l water. When the water starts to boil, add the two fishbouillon cubes.

Clean all the vegetables and peel them. Bake the vegetables in a pan for a few minutes. They just need to soften, they cannot get colour! Pour in a soup pan tomato puree and saffron. After that pour in the white wine en let it boil together until the half remains. Add the fish broth so it becomes a royal soup. Add the thyme and the bay leaves for some flavour.

Let the soup boil carefully for 20 minutes. Add some salt cayenne pepper. Cut the fish in small pieces, bake them till they get some colour and add them to the soup with the cream. Let it boil in the soup for 5 minutes. Serve it with cooked rice, aioli and bread to finish the soup.
