Veggie fried rice

- 150 gr fried rice
- 200 gr green peas
- 1 carrot
- 1 leek
- 2 eggs

It is monday again and that means a new meat free monday! Not much time to cook but still craving for some healthy food? This veggie fried rice is the answer to all of your questions.
Cook the rice as said. After those minutes you drain off the rice.
Clean the carrot and the leek and chop it into pieces. I prefer to have bigger pieces but you can make them as small as you like. Put a wok on the stove and heat some oil in it. Add the vegetables and stir-fry them for about 4-6 minutes.
Put a pan with water to the stove and cook the green peas into it. I prefer a vegetable which has a bite so the cooking time might be a little to short for you. I prefer to cook the green peas for about 4-6 minutes. You can cook them longer if you like or just buy a can with green peas and heat them on the stove.
Use the egg to prepare a omelet. Break the egg into a mug and mix it with a bit of pepper and salt. Add it carefully into the stir-frying pan and wait for the bottom of the egg to be cooked. When the bottom is cooked you can ‘ flip’ the half of the egg onto the other half. Leave it on the stove for a couple more minutes and chop it into pieces after that.
Add the vegetables to the rice together with the nasiherbs and the small pieces of egg. Stir it all.
