Salmon in puff pastry with spinach

Directions

Today we have a salmon dish on the Christmas menu. Salmon in puff pastry with spinach and ricotta. It's not hard to make and fits perfectly in a  delicious Christmas dinner. 

Let the puff pastry defrost, this will take about 10 minutes. 

Decide how big you want to make the salmon appetizers. You can keep the size of the puff pastry but you can also cut in a little smaller. We recommend doing that if you want to use this as an entree/side dish. Cut the salmon so that it fits on the puff pastry and that there is space left to close it. 

Cut the spring onions in thin rings and the garlic very fine. Fry this shorty with the spinach. Mix everything in a bowl with the ricotta. Season the salmon with salt and pepper and place it in the middle of the puff pastry.Scoop the ricotta mixture on top of the salmon and press it a little bit. 

Beat an egg and spread a little bit with a brush on the edges of the puff pastry. Take the other two slices and place them on top of the other. Press the edges with a fork and make little cuts in the dough. Also, make a few cuts on top of the salmon package. Then spread some more egg on top and bake them in the oven for about 15 - 20 minutes until they're golden brown.
