Directions

These salmon towers look beautiful and are fun to make as an entree at dinner. They are low-carb and are full of vegetables. Show everyone your cooking skills!

At first you will make the various layers for the salmon tower. Boil the eggs hard, peel them and chop them into small blocks when they are cooled down. Mix the chopped eggs with the mayonnaise and mustard. You made a simple egg salad, now season this salad with salt and pepper. Cut the courgette and the tomato into tiny blocks, and cut the spring onion into small rings. Then cut the smoked salmon into pieces and mix the salmon with the chopped chives. You cut the avocado in half, remove the pit and remove the peel. Cut the flesh into small blocks, and season the avocado with olive oil, lemon juice, pepper and salt.

Now, you've prepared all the layers for the dish. Place the cooking rings on a plate to make the tower. First, you place a slice of iceberg lettuce between 0.5 and 1 cm thick on each plate. After that, you will build the layers in the cooking ring: layer of the egg salad, layer of courgette-tomato-spring onion, layer of avocado and finally the salmon. Press the layers. You can carefully remove the cooking ring and garnish the pies with some fresh chives and some pepper.
