Halloween pumpkin soup

It's Halloween and pumpkin belongs to it. And when I think of pumpkin, I think of soup! So today a recipe for Halloween pumpkin soup! This is a basic recipe, but by adding these two ingredients: yellow curry and coconut milk, will create a true taste sensation that makes you scared.

Wash the squash and makte them a half lengthwise. Delete the seeds and stringy insides with a spoon, do not remove the peel. Cut each half into 2 cm cubes. Cut the carrots into slices. Boil with 400 ml of water and 1 stock cube 20 to 30 min until the vegetables are soft.

Chop the onion. Heat the oil in a pan and fry the onion for 5 minutes. On low heat. Add the curry paste, keep stirring to release any odors. Add the coconut milk and let it simmer for about 10 minutes. Remove from heat.

Add the curry paste to the broth with pumpkin and carrot. Puree the soup with a hand blender and sprinkle freshly chopped coriander with spring onion.
