Abuelita Leonoro’s Authentic Mexican Flan

After my Mexican friend berated me once again about ‘fake Mexican food’ being sold by fast food chains and supermarkets, I asked her to send me some recipes. After she batted her eyelashes at her grandmother, I received this recipe for a delicious authentic Mexican flan.
Preheat your oven to 170 degrees Celsius and set out your baking dish. Place your sauce pan with your sugar, water and the insides of the vanilla bean on high heat until the sugar melts. When all sugar has melted, lower the heat and continue to boil until it turns into a light brown caramel syrup. Pour the syrup into the bottom of the baking dish so that it is covered evenly.
Put the rest of the ingredients into a bowl and mix into a smooth batter. The condensed milk and cream cheese make it different than a Spanish flan, which is made with milk. Slowly pour the batter into the caramel covered baking dish. Bake the flan in the preheated oven for about 55 minutes. Take the flan out of the oven and let it cool down. Keep in mind that the flan will continue to bake while it cools down. Do not leave your flan in the oven for too long!
When the flan has cooled, it is time to turn it over. Make sure that you first separate the flan from the edge with a knife, so that it comes out of the baking dish smoothly when turned over. Place a plate on the baking dish and turn it over in a fluid motion. Make sure to do this quickly and be careful not to spill the liquid caramel.
